Question by Vickie: How do you make “red-eye” gravy?
My grandmother used to make some type of “red-eye gravy” for ham that was made with coffee or something like that. My father loved it. Does ne1 know how to make it?

Fried Country Ham
with “Redeye” Gravy

Serves 2

2 thick slices of country ham
2 tbsp. shortening or vegetable oil
½ cup strong black coffee

Heat the shortening in a cast-iron skillet over medium-high heat.

Add the ham slices and fry the ham just until it starts to turn brown, about two minutes.

Turn the ham slices over and fry the second side another two minutes.

Remove the ham slices to a plate.

Add the coffee to the hot skillet and stir it with a wooden spoon to release any ham bits in the bottom of the skillet.

Pour the hot "red-eye" gravy over the fried ham slices.
